The History

Burgundy – Appellation: Chablis Premier Cru.

Nicknamed the golden gate of Burgundy, Chablis is a charming town famous for its wine

prestigious, located 20 km from Auxerre. On the Côte des Vai lons, located on the left bank of the Serein, there are 8

localities at the origin of this call.

 

The Grape

100% Chardonnay

 

Tasting Note

Chablis 1er Cru Vaillons is a very pleasant wine with marked notes of yellow fruits and white flowers. Its full, silky palate gives it a remarkable length that will awaken your taste buds. This wine, both floral and mineral, with a fairly light colour, will be ideal with fish in cream or white meat such as a veal chop.

Winemaking

The because of these vines are tailed in simple Guyot.  Type of sustainable farming: throughout the year, soil maintenance is carried out mechanically by regular ploughing in order to avoid chemical weeding.After pressing, the juice obtained is settled at a low temperature and then racked and transferred directly to our barrels in order to proceed with its alcoholic fermentation (between 12°C and 19°C).  Malolactic fermentation takes place in oak barrels and the wine is aged for a minimum of 8 to 12 months depending on the vintage.
